Im putting this formula into a cell in a date/time property column and it returns the text "=Today()" ie with no functionality.
Hi,
If you have activated Dependencies for the sheet and trying to input it the formula in the Start or End date it will not work because you can't use formulas in those columns when dependencies are enabled but, you can type a "t" instead, and today's date will be added.

Are you trying to edit a sheet or a report? Reports allow you to update data in the source sheet where the data originates but you can't enter a formula through a report. It would do exactly what you describe, display the formula as text with no functionality.
