I've done some research, so I'm pretty sure I already know the answer. I have a project with a hard completion date. I would like to have any subtask scheduled backward from the completion date. Can that be done in Smartsheet?

There is a Template called: Project with Hard Deadline and Gantt that probably is what you´re looking for.

Enter Search : Project with Hard Deadline
You will see the Single Project Template Called
"Project with Hard Deadline and Gantt"
Click on it and it will appear in your SmartSheet Collection
Not much to look at but at least it can start a person in the right direction for entering a Deadline Date and the remainder of items get scheduled using predecessors with SF with task below.
