Is there any way to create automation that will automatically sort a sheet when a cell is updated or changed?
Have you considered using a report? A report can gather all of the data in your original sheet and display it (keeping it editable in the report) in a sorted order. The only challenge with a report is that if you are using hierarchy (indented rows) the report does not keep hierarchy. Perhaps that will work for you.

I would like to request this as an automation update. Yes we understand reports. We would also like this option in the mainsheet as well.
