Proof Title Change
Is there a way to change the title of a proof? It seems to be pulling from the first column that was originally set up in the sheet, but that unfortunately is someone's name and I can't seem to change it. I even repurposed the column and made a new contact/name column, but now the title is pulling from the new name column.
It's difficult because the notifications when the proof is approved are saying "So and so has approved so and so proof."

The proofing name when sent in an email is associated with the Primary Column in the sheet. Is this where you updated the information?
I've tested and if you update what the text is in the primary cell, the name associated with the proof automatically updates. Here's more information on Primary Columns.

Is there a way to manually edit the title or message of the proof invite? These fields are grayed out for me (the sheet owner) and I'm not sure if this is the intent or if there is a program error.

Do you mean these gray fields, from the "Invite" button?
If so, these are showing you the default message that will appear if you don't type anything else. You should be able to manually type something different on top. As you type it will clear out the gray text and allow you to add custom text from scratch instead:
