How can I create a drop down menu dependent on value selected on the previous drop-down menu?

Sounds like a nice feature. I don't think it's currently supported, but I can see the use of it.
Laura, Brad is right, however.....
You need a system that can handle conditional logic so the next question is offered according to the previous selection and so on.
You cannot do this with Smartsheet without some outside help.
You could use Google Forms which offer conditional logic and the resultant data will populate a row in Smartsheet.
OR
You use Appsheet to provide the User Interface and logic while still having your tables in Smartsheet plus the Sheet that will take the result of your choices and presumable allow the work to be completed.
