Viewing gantt when there are numerous dates

I have a project intake sheet that has 5 columns for dates: date created; requested start and end; approved start and end. Of course when I try to have a gantt view, it doesn't know which dates to use for the gantt (I want approved start/end). Is there anyway to tell it to only focus on 2 of the 5 dates?

Yes. You can select the Start Date and End Date column in the Project Settings menu.
