Is there a way to become aware if someone unsucribes from update request?

There currently isn't a way for the sheet owner or workflow creator to be notified if a user decides to unsubscribe from a workflow notification/email.

However, Update Requests have a "log" that you can access and review to ensure that users have completed the request:

Then, if you suspect someone has accidentally unsubscribed, you can quickly clone the workflow and this will re-subscribe them to the new version.
