Ok. To populate today's date, enter
=TODAY()
into a date type column.
=TODAY(-1)
for yesterday
=TODAY(-2)
for the day before that, so on and so forth until your dates are populated.
NOTE: The TODAY function will only update when the sheet is activated. To do this you can either update a cell link, open the sheet and save it, submit a form, or submit an update request. This will need to be done daily for the TODAY function to update, but there are ways to make doing this relatively quick and easy, and it will save you from having to manually update every single date.

Ok so once I have the date column, location column and the calculation for how many apps per date per location on the metric sheet, how do I get that on the dashboard?

You have multiple options. You could chart the data, or you could display it in a metrics widget, or publish the sheet and use a Web URL widget. It just depends on exactly what you want to show and how you want to show it.

Date
Location
Number

Then I would suggest metrics widgets.

Ok. How would I do that?

You would create a new dashboard, then select the option to add a new widget. From there you would select the metrics widget, then you should be prompted to link to a sheet where you can link to a specific cell or set of cells within that sheet.
