Formula in Drop Down List
I need to have an excel Drop Down list that includes the "NOW" formula (date and time now) and Pending

Can you explain the scenario a little more?
You cannot have formula in dropdown lists, but you can use IF functions in helper columns to read the value from a drop down list and perform a function based on its value.
Maybe this could help you?
If you explain a little more, I can suggest the functions for the helper column?

Hi Debbie,
I need my printing dept to tell me they are starting a job NOW. They are not quite computer literate enough to insert formula.
In an ideal world I would also like to learn if there is an EASY SHORTCUT that anyone could type in a field that would insert a future date.

Why don't you get them to check a box, then you can use the record date automation to update the sheet with the date when the box was checked. However this won't give you the time.
The workflow below says if the Printed box is ticked then set todays date in the When Printed column.
You can see from the results that the time doesn't get captured though.
If you need the time to be recorded, we can capture it in a Text format using the following add-in that SBP developed before the date recorder was available. However the code which captures the time is in a text format, so would just be for reference.

To add to Debbie's excellent advice/answer.
You could use the dropdown list and use that together with Debbie's suggestion using the Record a date feature.
If you need the time as well, you can use a method I developed natively in Smartsheet.
