Reminders for Approvals

I am working on an Approval Process workflow and I would like to have Reminder(s) generated by the system after 2 days if the manager(s) did not approve the request yet.

I have the 'Sent' status and I am planning to use the 'last modified' to trigger it. What would be the best way ?

A helper column that calculates TODAY()-LastModified. Trigger when that column is greater than 2.

To add to James's excellent advice/answer.

You could also use the record a date feature to register the date the Approval was started and use that for the reminder.
