Can we pull date stamps?

Good Morning,

I am a project manager, and I want to collect the timeframes in which my designers and checkers take to complete a given task. However, I would like to know how much time the designer works on it, how much time the checker takes to review the drawing, and then how much time does the task sit idle. I have them put pre-set status messages in a cell (for example: In Progress, In Check, ...) and I would like to know as soon as that status changes, can I record the difference in the cell history. For example (start time of In Progress -> start time of In Check?
