Coding for Health symbols

I am BRAND NEW to Smartsheet and am looking for a way to code my sheet so that whenever a new entry is submitted via the form, the Health Status symbol is automated to the color Red?

I also can't seem to change the color of my forms no matter what I choose to do in the Colors and Logos it always ends up White!
