How do I go back to the old view of Smartsheets?

The new view is very frustrating. How do I switch back to the old view? This new view is slowing my work down and does not display correctly on smaller laptops.

New user of Smartsheet here. On this preview (https://www.smartsheet.com/sites/default/files/2021-04/notifications.gif) the font selected is Inter. Why do I only have a choice of Arial, Tahoma, Times and Verdana on my sheets? I feel like I've gone back 30 years or so.
