Looking to time stamp when a box is checked

When a box is checked, I would like to add a time stamp of when that happens. I can put together a formula that involves today's date but I do not want that date field to change every time the sheet is refreshed. I want to be able to run reports capturing start and end dates for project phases. Does anyone know if it's possible to build a formula that captures the proper date?

You can use Workflows combined with the Record a date feature to store the date.

Yeah I didn't think about doing a vlookup work around utilizing the created date field. Essentially creating a copy to send to a new sheet and then the date field would capture the created date field in the new sheet. Then I can use a vlookup to send it back to the original sheet. Thanks
