Smartsheet has an Inventory Management template (see here) that you can download and customize, as well as an Inventory Stock Control Template (see here), and even a PPE Inventory Tracking template set which includes Dashboards and Reports (see here).

If none of these work as a starting-off point for your process, you may also want to post in the specific Healthcare Community group.
