Formula with symbols

I am trying to create a dashboard the will track information from 5 different sheets. I am trying to make a metrics that will count arrows. Each arrow means something else and I want the customer to know how many of the different arrows they have. My metric page will reference each sheet with the sum of the different arrows for each sheet. How do I accomplish this?

I hope someone understand what I am trying to accomplish here.

To count symbols you use a countif or counifs function. Each has a value. See the link below. As an example, to count the up arrows in a column titled Arrow you would use =COUNTIF(Arrow:Arrow, @cell="up").
