Notifications
Do you know if there is a way to view all the notifications established for sheets you own or are Admin?

There is no way to track that within Smartsheet, but it would be a great feature to have. Currently the only option is to manually track them. Feel free to Submit a Product Enhancement Request when you have a moment to let them know you are interested in this feature.
