I want my users that initially fill out the form to only see certain questions, and the full form viewable by the team managing the work. Is there a way to do that?

Having 2 separate forms could do the trick ?

This isnt going to work. The user entering the info needs to see the progression of the ticket and so does the team managing the tickets.

Yes. I would also suggest creating two separate forms. the first for the users you would only include the appropriate fields and the second for the triage team you would include all fields.
