Why aren't all my columns available when creating an "Insight"?

I want to create an insight for my sheet, however, every time I click "create insight", no matter which format I select, it's only displaying 3 of my 7 columns as options.. Is there a restriction to what type of data an insight can be generated on?

Yes, there are only specific columns that can be used to generate Insights. Work Insights supports only these column types: Dropdown (Single & Multi Select), Symbols, and Contact List columns.
