Is there a way to know the estimated % of work to be done every week? I didn't find a report about this, but this will be very helpful to track the overall execution of a project. Example: week 1=5%; week 2=18%; week 3=24%; week 4=32%; etc...

This isn't something that Smartsheet does automatically, that is, you'll need to configure this in your sheet with a formula of some kind. There are a few ways to track task delays, one of them is by mimicking baseline functionality: https://www.smartsheet.com/blog/quick-guide-mimicking-baseline-functionality-smartsheet
You can set up notifications that will email you once the baseline date difference is at a certain number. More on notifications here: https://help.smartsheet.com/articles/542904-using-notifications
You can also consider creating conditional formatting rules that will highlight cells/rows based on the date difference: https://help.smartsheet.com/articles/516359-conditional-formatting
These features will help queue you in on tasks that've slipped.
