Workspace Permissions vs Content Permissions
If someone is the owner of a workspace but I own files within that workspace, and then I'm removed from that workspace, what happens to the files? Does the workspace owner become the new file owner and I lose access?

Yes, if you are removed from the Workspace the items stay in the Workspace, the Owner of the Workspace will become the Owner of those items, and you will no longer have access (unless you are also shared individually to that specific item).
