Column Sorting Order

When sorting the "created" column in descending order, so that the most recent appears at the top, new sheets coming in still show at the bottom of the sheet. Is there a way to have new sheets appear at the top?

You're saying sheets but do you mean rows? If you're using a form for new rows to get added, you can go to settings of the form and change this setting:
