Changing Ownership of an Workflow (Alert)

Alerts will send with either the Sheet Owner or the user who triggered the change as the name associated with that email, see: Overview of Automated Notifications Sent via Smartsheet
It sounds like the person who left your team may have been the Owner of the sheet. In this case, you can either transfer the ownership of this one item (see here) or have a System Admin transfer all of that user's items to someone else (see here).
