Is it possible to add a field in the Filter to sort a to z. I would like to sort open items and by what is the nearest due date. Right now it's a 2 step process.

You're correct in that sorting and then filtering is a 2-step process. Currently, there isn't a way to apply a sort within a filter.
When you have a moment, submit a Product Enhancement Request using the form under Quick links on the right of the community site and let our Product team know how you'd like this type of feature to work in the application.
