Much like an email 'Sent' folder, is there a way to view in the Activity Log of a sheet the message that was originally sent with the invitation to view/edit to a collaborator/group of collaborators?

There currently isn't a way to view original sharing email messages that were sent out in Activity Log. When you have a moment, please submit a product enhancement request using the form under Quick links on the right of the community site to let our Product team know that you'd like to see that feature added.
