Update options under automation section

All of our forms are capturing the person's email who submitted the request. Under the automation section, add the option to alert the person who sent the form to receive an update when a specific field is changed. This would function as a specific notification of completion for the request that was submitted.

Yes! Under the options to add an alert I need the alert to only go back to the person who sent me the request. I don't believe that is currently an option.

Correct, it's not an option, but in the meantime, you could add an Alert that works similarly.

No. The Alert only needs to be sent to the person sending me the request and that person is never the same.

You can use the field they add their email to make the Alert Dynamic.

If the field you're using in the Form for the email is set to a Contact Column, you create an Alert and select that column as the source in the sheet (see screenshot below)

If the field isn't a Contact Column, you'd add a so-called Helper Column that is a Contact Column, add a formula to it referencing the one used in the Form, and then convert it to Column Formula so it's always automatically populated. (see screenshot below)
(You'd create the same Alert, but point it to the Helper Column instead)

Helper Column Formula would be something like:

=[Column in Form (Text and Not Contact)]@row
