Tracking what a Delay is within a Project

Question

This may be a longshot, but I am wondering if there is an easy way to track what a delay is within a project?

My best thought would be to make it a manual field within sheet summary that is a dropdown. It would be called something like Project Delay with dropdown selections like: Customer, Supply Chain,  Sourcing, etc.

Not sure if there is some way to make it a formula or if maybe it can pull from certain fields (which I can do easily, but then it is not uniform)? I would like to not make it manual, but it may be the only way.

This would then pull into a report for management to view.

A delay could be anything. Since we deal with food products and food builds it can vary what the delay is. It could be more than just an overdue task. As I tried to note in my original post it could be an ingredient delay, supply chain issue, customer delay, supplier issue, etc. My boss really wants some way to section it out within the project, kind of like a checkpoint and if there is a delay somehow it is easily noted or seen within the project.
