Workflow to Notify Project Owners

My team has a sheet that we use to keep track of our current projects. I have separate workflows set up to notify each person if they are assigned a project (their name is entered in the Project Owner column, which is a contact list). Is there a way to create one workflow that would notify just the person who was assigned as the project owner instead of notifying everyone who uses the sheet?

Yes, you can select that Contact List in the Workflow instead.
