Notifications Options
I assumed there was a way to have all of your automated notifications come to your smartsheets sidebar bell. This keeps them from filling up clients email. I am aware of the @ option that makes messages happen this way. I misread the messaging apps in Account and thought that is what I would enter. I also wanted to see if I could change the notifications preference for my clients - but that is of no significance if automation alerts can't be controlled within the software.
Secondly - without using parents, is there a way to only send ONE email to someone who would be triggered/reminded once even though they have many owned rows of items that meet alert specifications?

Yes, that's correct. Using these will keep alerts as separate emails until there are more than 6 rows with simultaneous alerts to the same user(s). So if you for sure want all alerts from the same automation being sent together, don't use these.

The email notification is mainly controlled by a user in their personal settings:
As far as multiple alerts to the same user:
If you're not using dynamic fields in your email alert subject line or email body, Smartsheet will group alerts to the same user into one email. If you are using dynamic fields, Smartsheet will send the alerts as individual emails, unless there are more than 6 simultaneous alerts (in which case, Smartsheet will strip out any dynamic field values not shared by all the messages, and will group them into a single email.)

I am familiar with Dynamic View, not field. Are you speaking to the personalization of an email by using {{Name}} in the automation?
