Can Smartsheet use a custom name for each document generated using document builder?

For example, can it pull Job number of the line it's generating the document for so that it's unique and custom and gives good visual confirmation you are attaching the correct document to outgoing e-mail to suppliers?

Yes, and you could also add a so-called helper column to combine multiple cells together.

Sure can. Create a filename field and drag it onto the Output Document Name field in Settings:
