Hi! It would be great if sheet admins could overwrite what's in an auto number column in the event we ever need to assign something a specific # or ID.

I second that.
It should deny us if the manual number is not unique (even for sheet owners) since the whole point of "autonumber" is to have unique numbers.
And "as an option," Smartsheet could either use the lowest unused number for subsequent new items, or just use the next number after the largest one.
