Is there any possibility the Role they're a part of in the Workapp has been changed from Editor to Viewer while they were making their edits?

Please have the user log out of all instances of Smartsheet & Workapps, then log in again and make edits through the Workapp.
If they still receive that error message even though their role should allow them to edit, please contact Smartsheet Support with a screen recording, the user's email address, and the underlying report/sheet information.
