How can I verify approvals in automated approvals workflows?

In the automation workflows there is an approval process that requires a user to approve or deny and that status is then recorded in a cell. Is there any way to validate that approval? Wince anyone could theoretically change the cell contents to be approved, even if the cells are locked, our needs require more authentication of approvals for auditing purposes. Is something like this possible? Such as a copy of emails that can be attached to the row?

You could check the Activity Log and have a process copying the row to another sheet as a log.

I appreciate the insight and the idea! I think, however, my first line of defense will be to create a document at the approvals' stages.
