Removing an owner

We have a couple sheets/forms that have two owners. The one created it and then they gave another ownership as well. We need to remove the original owner, if we do so, will that affect anything that was created? OR is there a way to have the emails that go out to not have the original owners name attached to them? I wasn't really able to find an answer to this question.
