I have hyperlinks on a sheet that hyperlink to other sheets. When I click on them using the mobile app it opens up the row for editing instead of opening up the hyperlinked sheet. Any help on this?

Currently, hyperlinks won't work from the mobile apps. As you've found, the edit row screen appears and the hyperlinks are treated as normal text.
From the desktop app, you can attach a link URL to the row (it'll appear as an attachment on the left side of the sheet grid) which can be opened from the mobile application. More information on attaching URLs can be found in the attachments help article.
