How do I set up a row to change to gray once the status is marked closed?

You can use conditional formatting to change the row color based on Status.

You can use conditional formatting to change the cell color based on the status. For instance, choose the status column is not blank for your condition, then choose the highlight color as grey for your format and choose entire row or selected cells for the range
I use this all the time to color code completed cells, cells at risk, cells overdue, etc.
