how can I search for a sheet and exclude certain workspaces in the search?

They moved the search box to the left bar, just under the notifications/bell icon click on the magnifying glass. Then since the update stinks you can click again on the magnifying glass which will open up further filter options. you should then see type, Location, last updated updating these then searching should help focus you search.

Seems they have a search shortcut as well Cmd/Ctrl+Shift+F

It might not be enough but its the best option that I have right off.
