I need to be able to record who approved something in a multi-step approval workflow. The contacts are access this via email notification, they are not going into the sheet.

You could achieve this by creating separate approval columns in your sheet, one for each approver. You could name the first approval column “(Approver 1 name) approval”, the second approval column “(Approver 2 name) approval” and so on.
Then, you can edit your approval workflow to record each approval request response in the relevant column - so for the action block that sends to Approver 1, you’ll select their column for the response, and so on for each approval step in the workflow.
