Here's a possible workaround or workarounds
Depending on the structure, developing something using Conditional Logic might be possible.

Can you set up a form to gather information that can then be used on a sheet in the background to perform formula calculations and let the magic of math unfold after you've submitted the form? You betcha. Absolutely. That's Smartsheet's strength.

Can you set up a form that keeps a running total that's visible to the end user - similar to "Shopping Cart" concept when purchasing online? Nope. Basically, Smartsheet is not an eCommerce platform (like any number of merchant websites that exist online) - so it is very much not optimized to mirror that experience.
