One of my editors accidently hit the unsubcribe button on her alert emails for a specific sheet. I tried to reestablish the Email Alert again but its not going through.
Any solutions?

I would try un-sharing your user, and then re-sharing, and then setting the alert for her.
Hi Isaac - what happens when you create a alert for that user? Do they show up in the Alert menu as sign up to receive the alert? Are you setting up a reminder or a notification?

Just clone the existing workflow and delete the old one.
That's it! You will start receiving the notifications again.
