As is possible with notifications, is there not a way to set which columns are included in a reminder? As you can see from my screen shot using a sheet I've created with many columns, I have no use for the reminder because I can't read it.

Unfortunately there isn't those settings for reminders today. Great idea though!
Please submit an Enhancement Request when you have a moment.
A possible workaround would be to set the reminder and also a notification that gets sent when something regarding the reminder is true.

Same issue here for me.
I want to send assigned users a reminder 1 day before due date and on due date.
The email received is meaningless (see screenshot).
I can't think of an alert workaround either. In my scenario, if I add a new line with due date tomorrow or today, I don't want assigned users to get an alert - alerts will become too frequent. I only want alerts for existing entries reaching their due date.
