Anyone understand why my "Hourly Update Request" (see screenshot) is not recurring?
It happens once, but I expect it to keep happening "once an hour" until cell is "unchecked"

"once an hour" means the Update Request will be sent out only once (within an hour) when the Checkbox "Send another update request" was checked.
So even when you check and uncheck this box several times within an hour, the alert will only be sent out once and the next alert will be sent after the state of the box CHANGES from unchecked to checked one (or more) hour(s) later.
Recurring reminders are not supported, as far as I know.

I did not believe it at first either.
I have implemented recurring notifications using either Zapier or the API. We did not need hourly, so I might need to rethink the use of Zapier.
I needed to use Zapier or the API in case no one was looking at the Sheet.

For large Sheets, I try to use Reports instead of the Sheet directly and can't be sure the sheet will be refreshed when I want it to be refreshed.
I'd also tend to avoid using the Update Request as there is no way to easily clean up the unused ones. I am one of those people that get annoyed by visual cues (the update request pending icon) that turn out to mean nothing.

I found if I add a daily delivery option (with the same trigger) I will get 2 additional update request. See screen shot
Weekly sends an update when weekday changes to 5
If user "checks" [Send another update request], 2 more update requests will be sent (1 for the hourly and 1 for the daily).
This is all because the update link (sent by Alerts and Actions) is one-time only
