I was wondering if there is any way to have different sharing scheme for different sheets in one workspace?

Yes, you can share people to the entire workspace, or just to an individual sheet within a workspace. This article addresses the ways you can share: https://help.smartsheet.com/articles/522067-workspace-sharing
