Yes, it is possible. How to set it up depends on your specific use case.
One way to do it would be to count the rows with submissions. If the sheet is combined with submissions and other rows you could use a predefined field from the form that is hidden.

You could use a COUNT formula that will tell you how many rows are not blank which would only be the ones auto-populated by the form submissions, then use a metric widget on your dashboard to display the result of your formula. That would give you a live count.
