We create forms for volunteer events. We are running into the issue where people are signing up until the very last minute. Is there a way add a deadline to the form or lock it? Or disable the form link.

There currently isn't a way to have a form automatically lock after a certain amount of time. When you have a moment, please submit a product enhancement request using the form under Quick links on the right of the community site to let our Product team know that you'd like to have this feature added to a future version of Smartsheet.
You might consider setting reminders in your sheet that will send you an alert a few days before and on your deadline. You can then go to the sheet and manually disable the form link.
