I am about to license a user that is been on the trial version. This user has some stuff created on the site. Once I license the user... will her stuff port over as well or will the user need to re-do all?

Once you convert their trial into a license, all of the items they own will remain in their account. They won't have to recreate anything.
Note that once you add them to your account, their account and all of their items can be managed by you. (I'm assuming that you're a system admin on your account.) Details on different management options can be found here: https://help.smartsheet.com/articles/795920-managing-users-multiuser-plans-
