Can I create % Complete and Duration columns in a sheet created from the New Blank template that does not already have them?

Thank you for your response. I didn't find the answer to my question in the article you linked. When I right-click a column header in my sheet, Project Settings is greyed out. I think the solution may be to copy my data from the current sheet and paste it into the Project template.

You likely started from the Blank Sheet "template"
Try starting from the Projec Sheet template (no quotes because it is a real template, not a sheet - note the different icons)

Any sheet can be modified to look like any project sheet.
You mentioned Project Settings is greyed out - are you the owner of the sheet? If you are not the owner and are shared to the sheet as an Editor, you will not have access to Project Settings.
