Will the new sheet summary fields be the profile data (metadata) fields for control center or will there still be a need for profile data (metadata) in a summary section at the top of the sheet?
The summary section at the top of a sheet in Control Center is a legacy of older development work.
You can update your control center to point a central metadata sheet that contains all your profile data. This is the method I preferred to use with clients when I deployed at Smartsheet.
I believe that it is anticipated to eventually use the new summary fields with Control Center but not as of now.

I created two sheets with separate forms and when I checked to see if anyone had submitted the forms yet, I didn't see anything on either sheet but when I click on "manage forms" it says that there are 62 submissions for one and 18 for the other.
