Is there a way to have a drop down list used across multiple sheets refer to a centralized location for the list? That way if the list needs to change, it can be changed in one place and seen everywhere it is used.

That is something we are working on for a future release, I'll make sure to let you know when I have a timeline on it. For now, you would have to go into each sheet individually to update, or use the Smartsheet API to update.
