I'd like to create a sheet similar to an Excel Pivot Table. Can't seem to find a way. I've tried report but that just lists items. I want to count items by status in one simple view.

You wills truggle with that one Wayne.
Maybe try an automated Report that exports to Excel, runs a macro then shows you what you want to see in Graphical or Slice & Dice views?
Or try Power BI from Microsoft which links nicely with Smartsheet and a number of our clients find very useful?
